Sweet Potato-Beet Hash

Ingredients

  1. 1 large sweet potato, peeled and cut into 1/4-inch dice
  2. 1 large fresh beet, peeled and cut into 1/4-inch dice
  3. 1 tablespoon olive oil
  4. Kosher salt and freshly ground pepper
  5. 1 slice bacon, cut into lardons
  6. 1 small onion, diced

Instructions

  1. Preheat the oven to 400 degrees F. Toss the cut sweet potatoes and beets with olive oil and season with salt and pepper. Place on a parchment-lined baking sheet and bake until vegetables are golden, about 25 to 30 minutes, stirring every 10 minutes.
  2. Meanwhile, in a medium skillet over medium-low heat, add the bacon and render the fat until the bacon is crispy. Add the onions and season with salt, and continue to cook until the onions start to caramelize and turn golden, about 10 minutes. Add the roasted sweet potatoes and beets to the pan and stir to combine cooking another 5 minutes. Taste and adjust the seasoning, if necessary and serve immediately.

Love this recipe. Husband’s brain doctor told us to eat beets at least once a month along with several other food recommendations. Most of the foods we already eat frequently but beets were never on our menu. I have tried roasted beets in salads in restaurants and to me they had no flavor. I was a bit worried that beets would be something we endured rather than enjoyed.But…
This recipe is delicious and we both love it. I’ve made it with and without the bacon. Great either way. I also like to roast the beet or beets whole and then peel and dice. Now we love beets.

Wow this is awesome (and I don’t even like sweet potatoes!). I turned it into a main dish for brunch, topping it with a fried duck egg and crumbled goat cheese at the end. Also, I used spring onions (greens and all) instead of regular onion, and added a garlic clove and chopped sage to the skillet, in the last minute before adding the beets/potatoes. It was incredible.
