Ingredients
- 3 tablespoons lime juice
- 1/4 cup chopped red onion
- 1/2 teaspoon ground cumin
- 1 tablespoon hot sauce (recommended brand: Frank’s Red Hot)
- 1 stalk celery, chopped
- 2 roasted red peppers, finely chopped
- 1/4 cup cilantro, leaves only
- 2 (15-ounce) cans black-eyed peas, drained
- 3 tablespoons canola oil
- 2 teaspoons grated fresh ginger
- Salt and freshly ground black pepper
Instructions
- In a large bowl combine all ingredients and season with salt and pepper. Toss together and serve.

I don’t normally eat/like Black-Eyed Peas and wasn’t one to eat the traditional New Years foods . . . . . Until 2020 hit! This was on my menu on New Years Day 2021 AND 2022! REALLY like this salad! I don’t know if it’s the lime or onions or cumin or what tips it over the edge of mediocre to really good – its just a bright, fresh balance. Don’t know if I will increase the number of times I eat Black-Eyed Peas – but I do know this will be my go-to first choice when I do have them!!!

Really great salad. My only change would be to reduce the amount of onion slightly if you anticipate leftovers because the flavors do grow. This will become a staple work lunch for me.
