Ingredients

  1. 2 cups mayonnaise
  2. 1 cup sour cream
  3. 1/4 cup apple cider vinegar
  4. 1 tablespoon adobo sauce, plus more as needed
  5. 1 chipotle pepper in adobo sauce, finely chopped
  6. 2 cups carrots, shredded
  7. 1/2 cup dried cranberries
  8. 1/2 cup golden raisins
  9. 2 Granny Smith apples, cored and shredded
  10. 2 Bosc pears, cored and shredded
  11. 1 head red cabbage, shredded or sliced thin
  12. 1 head Savoy cabbage, shredded or sliced thin
  13. Salt and freshly ground black pepper

Instructions

  1. In a large bowl, stir together the mayonnaise, sour cream, apple cider vinegar, adobo sauce and chipotle pepper. Taste, season with salt and pepper and, if needed, add a bit more adobo sauce to make it spicy to your taste. Add the carrots, dried cranberries, raisins, apples, pears and cabbages and then toss to combine. Taste and season with a pinch of salt and a grind or 2 of pepper. Cover and refrigerate at least 1 hour before serving.

Fort Bragg, SC. Sunny is a “gem” in the Food Network family. She has a friendly and easy

Made this as a side dish for thanksgiving and it was a crowd pleaser! I did half the recipe since we didn’t have 15-18 people to serve. My father, who is a very picky eater had two portions of it! I think the mixture of sweet with spice is what makes this coleslaw stand out from any others, not to mention the beautiful colors. Definitely a keeper in my book and will be making again and again!
