Sugar Snap Peas with Chives

Ingredients

  1. 1 1/2 pounds sugar snap peas
  2. Coarse salt
  3. 1 teaspoon sugar
  4. 2 tablespoons butter
  5. 3 tablespoons chopped or snipped fresh chives

Instructions

  1. Place peas in pot and add 1-inch water. Add a little salt, a teaspoon of sugar and a couple of pats of butter to the pot. Bring water to a boil. Reduce heat to simmer. Cover and cook until peas are tender but still bright green, 7 to 8 minutes. Remove from heat. Add chives. Transfer peas to a serving dish.

I wasn’t sure if I would enjoy the snap pea/chive combination of flavors, but I was pleasantly surprised. (I happened to have those two items from my farm share this week, and was looking for an easy way to use both. This fit the bill!) Was also a pleasant change of pace from the ubiquitous stir-fry treatment of snap peas.

Though my husband enjoys them, I’m not a big fan of green vegetables. However, I’m trying to introduce more of them into my diet for the health benefits and I enjoyed these well enough.
