Spicy Grilled Corn

Ingredients

  1. 3 tablespoons unsalted butter, at room temperature
  2. 1/2 teaspoon smoked paprika
  3. 1/2 teaspoon red pepper flakes
  4. Kosher salt and freshly ground black pepper
  5. 4 ears of corn, shucked (husk and silk removed)

Instructions

  1. Preheat the grill to medium heat.

  3. In a small bowl, mix the butter, paprika, red pepper flakes
  4. and salt and pepper to taste. Rub the spiced butter on the corn, coating
  5. completely.

  7. Wrap each ear of corn in aluminum foil and place on the
  8. grill. Cook 20 to 25 minutes, turning several times for even cooking. Carefully
  9. remove the foil before serving.

The smoked paprika and red pepper flakes added great flavor to already great corn. I have grilled corn in the husk and just on the grill but I thought the foil did steam and grill the corn nicely. The only criticism I have is that I needed more butter than called for so I had to go back and mix another batch but that may be because I subscribe to the Paula Deen school of more butter is better. I definitely will make this again before corn season in Ohio is over.
