Ingredients
- 1 bunch collard greens, center ribs removed and leaves torn into large pieces
- 1 (15-ounce) can pinto beans
- 1 (14-ounce) can low-sodium beef broth
- 1/2 cup frozen chopped onions
- 1/2 teaspoon red pepper flakes
- 2 teaspoons red wine vinegar
- 1/4 cup real bacon pieces
Instructions
- In a medium saucepan over medium heat, combine all ingredients except beans and cook for 15 minutes stirring occasionally. Add bean and cook for another 2 minutes.

I LOVE this recipe!! We “vegetarian-ized” it by leaving out the bacon and using veggie broth instead of chicken broth, which works perfectly. I have collard greens growing in my garden (and taking over like weeds so this is a delicious way to use them up. After cooking a bit the broth gets almost creamy and buttery, even with no butter or cream used in the recipe, so it’s great to serve over rice, plus it’s quick and easy.

I am not a fan of collard greens, and I love this recipe. It is so easy, delicious, and nutricious. The negative comments are shocking as the results are so yummy! Reduce the spice, find better can beans, and enjoy eating healthy!

I’m not a greens lover and this recipe will definitely not change my mind; It had a good flavor to it but I feel the crushed red peppers made it too spicy for my son to eat and overwhelmed the other flavors; I may try it again without the red pepper and less beef broth
I grew up eating beans and greens. This was not a good substitue. Maybe it was the canned beans. I don’t know, but it did not taste good.
