Ingredients

  1. 8 ears corn, husked
  2. 2 tablespoons sugar
  3. 1 tablespoons all-purpose flour
  4. Salt and freshly ground black pepper
  5. 1 cup heavy cream
  6. 1/2 cup cold water
  7. 2 tablespoons bacon grease
  8. 1 tablespoons butter

Instructions

  1. In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.
  2. Whisk together sugar, flour, and salt and pepper, to taste. Combine with corn. Add the heavy cream and water. Mix.
  3. In a large skillet over medium heat, heat bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy, about 30 minutes.
  4. Add the butter right before serving.

Made this for thanksgiving. Family loved it so much we had no leftovers. I did a mix of fresh and frozen corn. Only had 1/2 cup of heavy cream so I added 1/2 cup of whole milk. Omitted the sugar and it was still super sweet. Added a little more flour towards the end because it wasn’t getting thick enough. Made this hours in advance and heated it up when dinner time came.

I made this on the smoker and added 4 slices of cubed bacon and it was UNREAL. Be sure to let it sit out for a bit before serving. Smoked at 275 for around 30 mins stirring frequently.

Make this every Thanksgiving because it is such a hit. I just use a bag of frozen corn as opposed to shucking corn. So good!

Enjoyed the recipe as I followed it.. But as we all like to tweak recipes according to our different tastes and likes I minced 2 Sarrano ️ peppers and garlic and of course crumbled bacon pieces.. It was so delicious with grilled round steak and lobster tails and garden string beans and peach cream cake for my wifes suprise B-day dinner.. Thanks y’all..

This turned out pretty good. I used a large(ish) bag of frozen corn and after it cooked for awhile I blended a couple ladles full to make it more liked creamed corn. Added extra butter.

This is delicious. I have  never made creamed corn before and I had some awesome frozen Michigan sweet corn in the freezer. I would love to be able to give this more of a Mexican spin. Any suggestions? Either way, made as written was delicious!

This is a definite go to recipe for our family. We ALWAYS have it at thanksgiving. Fresh corn works the best, so when it is in season we buy a lot of fresh corn and vacuum seal it so we can have the fresh corn for this recipe.

Give yourself time to let it sit once done, it makes a world of difference in the richness of falvor
