Sesame Peanut Noodles

I always make a large vat of these since they’re lovely to keep to pick at in the fridge, too. Plus, although they’re easy to make, you do need quite a few ingredients – and this holds true whether you’re making a small or big batch, so may as well go all out. I buy ready-cooked egg noodles from the supermarket, which make these even faster to fix.

Ingredients

  1. 1 tablespoon sesame oil
  2. 1 tablespoon garlic infused oil
  3. 1 tablespoon soy sauce
  4. 2 tablespoons sweet chilli sauce
  5. 1/3 cup smooth peanut butter
  6. 2 tablespoons lime juice
  7. 4 ounces/1 1/2 cups mange-tout (snow peas)
  8. 2 cups bean sprouts, rinsed
  9. 1 red pepper, seeded and cut into small strips
  10. 2 scallions, finely sliced
  11. 1 1/4 pounds cooked egg noodles
  12. 1/4 cup sesame seeds
  13. 4 tablespoons freshly chopped coriander leaves or 1/4 cup freshly chopped cilantro leaves

Instructions

  1. Whisk together all of the dressing ingredients in a bowl or jug.
  2. Put the mange-tout, bean sprouts, sliced red pepper, sliced scallions and noodles into a bowl.
  3. Pour over the dressing and mix thoroughly to coat everything well.
  4. Sprinkle with the sesame seeds and coriander/cilantro and pack up as needed.

I was quite disappointed with the blandness of this dish. The peanut sauce was not nearly enough to provide peanut flavor to 1 1/4 pounds of noodles; I would recommended tripling the sauce recipe. Tried to doctor it up after mixing it together, but it just never made the grade. I plan to make more sauce today and serve it up for dinner again this evening.

Very good!, hot or cold. Could use a bit more peanut sauce but overall very light and great with chicken lettuce wraps.

I love this recipe.. very useful for entertaining or a casual lunch.I use less noddes (1 pack is plenty) and about half the ammount of peanut butter, and you can vary the vegetables as much as you like.

I love this recipe.
The sauce is a little thick so I add some pasta water to thin it out a bit. Sometimes I spice it up a bit by adding a little chili sauce.
I’ve also switched up the vegetables by doing it with just broccoli and scallions.
It’s good and super fast!
