Ingredients
- 16 medium diver scallops, cleaned
- 1/8 cup extra-virgin olive oil, plus more for searing
- 2 teaspoons minced garlic
- 1 tablespoon finely chopped thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups field greens
Instructions
- In a medium bowl, marinate the scallops with olive oil, garlic, thyme, salt, and pepper. Let them marinate for 20 minutes.
- Heat enough olive oil to lightly coat the bottom of a medium saute pan over medium-high heat. Add the scallops. Cook quickly in each side until golden brown, about 1 to 2 minutes per side. Remove from the heat and place 4 scallops around a mound of greens. Repeat.

Followed recipe closely, and these scallops, over arugula/baby spinach/red beet greens were great . A side of basmati rice, with fresh orange and strawberry slices, made for a very memorable meal. Will definitely do this again.
Awesome – have done t his 5 or 6 times now. Very easy and delicious every time. Only one warning – the scallop mixture carmelizes and gets sticky. Be prepared to have a teflon spatula to scrape the great stuff from the bottom of the pan. It’s the best part 🙂

Sea scallops are not prepared often, due to the price, but when they were on sale, I jumped at the chance. This recipe is perfect, to truly experience the magnificent taste of good scallops.
Did not like the taste of thyme with the scallops.
