Ingredients
- 1 tablespoon vegetable oil
- 2 cups frozen corn kernels (or fresh if in season), thawed in the refrigerator
- 1 green bell pepper, halved, stem, seeds, and ribs removed, and cut into 1/4-inch dice
- Pinch red pepper flakes
- Salt and freshly ground black pepper
Instructions
- In a non-stick skillet, heat the oil over moderately high heat until it is hot but not smoking Add corn and pepper dice and saute, stirring, until tender but still crunchy, about 3 minutes. Stir in red pepper flakes and cook 15 more seconds. Season with salt and pepper.

great recipe and easy. I also used sweet red pepper (because that is what I had) and green onions. Instead of red pepper I used cajun seasoning.

Delicious, and a great basic recipe for beginning cooks. Worth the little extra work to use fresh corn off the cobb. I added some green onion and used sweet red pepper instead of green. Sauteeing makes the corn extra sweet.
I don’t like corn very much, but this simple recipe was delicious. Everyone at the party went bonkers over it. It promises to bocome a family standard. Fresh corn certainly helped, and sauteing added great flavor.
