Ingredients
- 1 small Idaho potato, peeled
- 1 small onion, coarsely chopped, about 1/3 cup
- 3/4 pound ground pork
- A few sprigs fresh parsley
- 1 teaspoon ground thyme, 1/3 palm full
- Salt and pepper
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
Instructions
- Grate the potato onto a cutting board, salt it, then transfer to a paper towel lined bowl or plate to drain.
- Place potato, onion, pork, parsley, thyme, salt and pepper in the food processor and pulse grind to form a sausage mixture. Heat a large nonstick skillet over medium heat with extra-virgin olive oil. When oil is hot, form 8 potato-sausage patties 3 inches wide, 1/2-inch thick, and set into skillet. Cook patties 6 to 7 minutes on each side until they are deeply golden brown in color.

I made these with the entire “Irish Breakfast” menu and they were really good. I used pork sausage though. The potatoes gave the patties a different texture which wasn’t bad, just different. Anyway, I am sure I will make again, but will use pork sausage instead of just ground pork.

I make sausage patties from ground pork all the time; however, use ground sage and do not be stingy. Tastes great.

I had some low-fat ground pork that I mistakenly bought, and was looking for a tasty way to use it and whatever else I had on had, without going into the bitter cold to the store. I tried this, and thought it smelled great. When my son and I ate it, I couldn’t finish it. It could be because I used low-fat pork; I don’t know. My son said to keep the recipe and try it again, but I tossed it out. I love Rach’s recipes, and will not be turned away from trying more. However, this one just didn’t do it for me at all.
I made these with fresh, organic ground pork and local potatoes – Wow! My husband & I loved it! I’m going to make them for my in-laws!
This recipe can be made by using regular sausage you buy in the store.. and just adding shredded potatoes.. its cheating haha, but it tastes GREAT!.. potatoes all crispy and fried just add a nice texture
I think adding the thyme with the mixture makes the sausage have a stronger flavor. Great combo!
The sausage was good but a bit bland and onions were not quite done.I added some ground red pepper..smoked hickory salt and 3 Tblesp of Maple syrup.I browned the sausage then turned the heat down a little bit and let them cook longer so they didn’t burn.
