Roasted Cauliflower and Broccoli

Ingredients

  1. 1 small head cauliflower (2 pounds), cut into florets
  2. 2 large stalks broccoli (1 pound), cut into florets
  3. 1 head garlic, broken into cloves
  4. 2 tablespoons olive oil
  5. 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Place cauliflower and broccoli into a 9 by 13 inch baking dish, toss with the olive oil, and sprinkle with salt. Cover the dish and bake for 1/2 hour. Remove the cover, stir and cook for 30 to 40 minutes more, until vegetables are tender and nicely browned, stirring occasionally.

This recipe was very helpful. I always find my roast broccoli gets really dried out but covering it for 30 minutes first solved that and was so much easier than trying to par boil it before roasting.

Loved it. I separated the cloves & took the skins off, mixed the cloves with the veggies. It was delicious. Also do the same with broccoli & cherry tomatoes & garlic.

The video explains the garlic–for bread, not vegs–so the garlic is not needed (though tossing with garlic salt does amp up the flavor a bit.) The cooking time is too long (probably for garlic) and covering is unnecessary. I cut my florets bigger than in the photo (like video) and roasted uncovered on a baking sheet with parchment paper at 400° for about 35 minutes, placing larger florets on the outside–stirring wasn’t needed. Delicious! (1 star deducted for incomplete directions.)

Did I miss something with the garlic?  Recipes lists 1 head garlic – broken into cloves, recipe directions don’t mention garlic and the video shows she roasts the entire head of garlic intact?
