Ingredients
- 1 large butternut squash (about 3 pounds), peeled and seeded and cut in 1-inch chunks
- 3 tablespoons good olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 400 degrees F.
- Place the squash on a sheet pan and drizzle with the olive oil, salt, and pepper and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the squash is tender, turning once with a metal spatula.

Loved it. I would like a suggestion for an herb to add to it after baked please.
Recipe says roast at 400 degrees, Ina says 425 in the video. I did 425 for about 25 minutes. I added large chopped red onions and whole peeled garlic cloves too. Served with a roasted half turkey breast. Delicious.

I used pre cut squash because of time constraints. I also sprinkled some nutmeg along with the salt & pepper. Yummy! Simple quick and easy! Make this your own!

To who didnt think it turned out so well roasting sqash at 400. Just a suggustion. All ovens are not a like you might try 425 for thirty mins. I found it delicious. Will make it again. Thanks Ina! By the way, the salt and pepper brought out the flavor of the squash.
