Praline Bacon

Ingredients

  1. 1 pound thick cut bacon
  2. 2 1/2 ounces light brown sugar, about 6 tablespoons
  3. 1 1/2 ounces pecan halves

Instructions

  1. Heat the oven to 400 degrees F.
  2. Line a half sheet pan with aluminum foil. Arrange the bacon in a single layer on a cooling rack, and set it in the prepared sheet pan. Bake until the bacon browns and the fat is rendered and bubbly. About 30 to 35 minutes.
  3. Meanwhile, combine the brown sugar and pecans in a small food processor. Pulse about 15 times or until the pecans are finely chopped.
  4. Remove the bacon from the oven, sprinkle with the brown sugar mixture, and pat down to adhere. Return to the oven a bake until the bacon is crisp, about 10 minutes.
  5. Cool on the rack for 10 minutes before serving.

I followed the instructions, but it turned out that even 30 minutes was too long a wait — it got over-done by then. Next time, I’ll have to add the powder 20 minutes in. Following the recipe, the bacon got black-burnt at the ends and set off the fire alarm. I also should have coated more of the powder on the bacon. Still, my wife liked the experimental results, so it’s worth it to try a few more iterations and get the timing worked out for my oven. And yes, I made sure to use a liquid oven thermometer to make sure my oven wasn’t lying to me.

Easy, delicious and reasonable expense. When I plan a party for which this sweet, crunchy bacon is a give…I start buying a pkg of my preferred bacon and freeze it. During a summer BBQ w margaritas, wine,beer, etc…this bacon makes a delicious appetizer! Enjoy this one.

Really, really addictive. The sweet/salty combination is perfect. 400 degrees is too hot, though. I nearly burned the first batch. For the second batch I roasted the bacon at 375 for 25 minutes, sprinkled on the sugar mixture, then roasted for 15 minutes more.

This recipe has turned into a holiday tradition for me and my daughter. We now leave it out with the cookies every year for Santa. Surprisingly, even though he usually leaves a couple cookies behind, there’s never any “Sugar Bacon” left over… :

It was very good, but I was hoping for the same taste I experienced in one of the Venetian’s steakhouse restaurants. I wondering how I could get the brown sugar coating on both sides of the bacon strip without overcooking the bacon. I think I will try creating a “caramel” with the brown sugar and pecans on the stove and then dipping the bacon into it after the first “bake”.

I used Butcher Thick Cut Hickory-Smoked bacon. While the dish was tasty, I didn’t taste the pecan. I’m wondering if the bacon was too thick or if I didn’t put in enough pecan. I also took another’s suggestion and baked the bacon at 350*. This is definitely worth making again. Thanks, Alton.

This is so addictive!! I made a full batch & silly me left it out to cool while I ran to the store. I came back to find that my daughter & boyfriend had eaten all but 2 pieces. Thanks a lot guys = It’s so good I’m making another batch right now. I agree with another reviewer that 350 is a much better temp for this, 400 is too high.

This is amazing!!!! I made it for a friend’s party. I was going to arrive late so I made it up and sent it along with someone else. When I arrived at the party I had 4 or 5 marriage proposals.

My only advise, 400* seems too long for my oven. 30 minutes at 350* for the first round and then 10-15 minutes at 350 after the praline mixture is added seems to work best in my oven.
