Ingredients
- 2 thick-cut slices bacon, cut crosswise into 1/4-inch wide strips
- 1 (12-ounce) small ham steak, diced
- 2 cups fresh corn kernels (from 2 to 3 ears), or 1 (10-ounce) package frozen corn, thawed
- 1 pound fresh lima beans in pods, shelled (1 1/2 cups), or 1 (10-ounce) package frozen baby lima beans, thawed
- 1 bunch scallions, cut crosswise into 1/3-inch pieces, white and pale green parts separate
- Kosher salt and freshly cracked black pepper
Instructions
- Cook the bacon in a 10-inch heavy skillet over moderate heat, stirring frequently until crisp, about 5 minutes. Using a slotted spoon, transfer the bacon to paper towels to drain, leaving the fat in the pan. Add the ham and cook until golden brown, about 5 minutes. Add the corn, lima beans and the white parts of the scallions and cook, stirring, about 2 minutes. Add 1/2 cup water, scraping up the brown bits on the bottom of the pan. Simmer until the vegetables are tender and most of the water has reduced, 5 to 8 minutes. Stir in the bacon, scallion greens and season with salt and pepper.
- BYOC: Try adding some red or orange peppers for some extra color.

This is a go to recipe for me and has been for years. I used to think of succotash as a side dish but now I serve this as a main course with a side of cornbread and it always gets rave reviews. I sometimes substitute a regular onion for the scallions. I just saute it with the ham for a few minutes before adding the corn and beans.
This recipe was awesome. I don’t eat meat so I left it out and people still liked it.
Very good and quick dinner for weeknights. I used fresh corn cut off the cob and frozen lima beans. I also used Boar’s Head Virginia Smoked ham slices from the deli, sliced thick and then chopped into bite size pieces. Everyone in my family loved this and I served with mashed potatoes and water rolls with butter. Very quick and easy but tastes great!
This was UNBELIEVABLE !!! As a single guy I love easy…bacon…ham. I used a reviewer’s suggestion of 1/2 cup chicken stock instead of water ….WOW!…too good! I’m making this again to impress my dates. (be careful of adding salt due to high salt in bacon
My husband is meat and potatoes all the way. He loves this dish. It’s fast and easy and very filling. The first time I used the water and the second time chicken stock. Both very good. Kids loved it too. It’s a staple for a quick week night dinner.

OMG! This should be renamed “Not Your Granny’s Succotash”. I made this following the recipe exactly, and used little lima beans rather than the large ones. I served it with cornbread and sweet pepper relish on the side. Definite hit with all the family. If not a fan of limas, might not want to try.
