Orchard Salad

Ingredients

  1. 1 head red leaf lettuce
  2. 1 head green leaf lettuce
  3. 1 teaspoon lemon juice, a wedge
  4. 1 crisp red apple, such as McIntosh or Paula Red, thinly sliced
  5. 1 Anjou pear, thinly sliced
  6. 2 tablespoons apple cider
  7. 2 tablespoons cider vinegar
  8. 1 teaspoon sugar
  9. 1/3 cup extra-virgin olive oil, eyeball it
  10. Salt and coarse black pepper
  11. 8 ounces sharp cheddar, thinly sliced

Instructions

  1. Coarsely chop lettuce. Squeeze the a little lemon juice over apples and pears and toss with greens. Combine cider, vinegar and sugar in a bowl and whisk in oil in a slow stream. Pour dressing over salad and season salad with salt and pepper and toss salad to combine and coat evenly. Serve salad with a garnish of sliced sharp cheddar cheese.

This was just ok. The dressing didn’t have a ton of flavor. I used less olive oil than the recipe calls for and I thought it was still too much. I may try adding more sugar or apple cider to increase flavor.

LOVE this salad! I bet I’ve made it 25 times now. I use just fuji or gala apples (no pears. I cut the cheddar into cubes & sometimes add thinly sliced cucumbers. Everyone always raves! I recommend using a really good cheddar, like Tillamook- it makes a big difference here.

I thought ORCHARD salads should consist of FRUIT/s AND NUT/s.I personally will choose white cheddar over the regular one.

I guess I am in the minority. I thought this salad was just ok. I think the wow factor for a salad lies heavily with the dressing and this dressing was just mediocre. As a whole, it wasn’t bad but it just tasted like lettuce, apples, and pears.

Of all the salads I have made from the food network, this has been the best. The crunchy apples are just wonderful! I couldn’t find ripe pears but, it was still wonderful! Can’t wait to try it with the pears!

I’m not usually a fan of salads with fruit in them. This is definitely the exception! This is a fantastic summer salad. All my friends asked for the recipe. Best of all, it took two seconds to put together! Definitely a keeper and fancy enough for guests.

One thing though: make sure your apples are CRISP! Mushy apples are generally nasty anyway, but in this salad, it ruins the whole effect.

This is quick, easy and a fantastic change of pace. Try substituting Apple Cider with Apple Sauce or use both. The Apple Sauce adds some body and a wonderful texture to your dressing. This salad has become a household favorite and a must try for everyone.
