Ingredients
- 3 pounds new potatoes, boiled and sliced into 1/4-inch thick rounds
- 4 green onions, thinly sliced
- 1 cup mayonnaise
- 3 tablespoons Dijon mustard
- 3 tablespoons whole grain mustard
- 2 cloves garlic, finely chopped
- 3 tablespoons white wine vinegar
- 1/4 cup chopped parsley
- Salt and freshly ground pepper
Instructions
- Place the warm potatoes and green onions in a large bowl. Whisk together the mayonnaise, mustards, garlic, vinegar and parsley and season with salt and pepper, to taste. Add the dressing to the potatoes and carefully mix until combined.

Delicious and easy potato salad! I only made a few changes based on my family’s taste and availability of ingredients I had on-hand. I didn’t add the 2 cloves of garlic and instead of white wine vinegar I used apple cider vinegar. My husband is a fan of onions in his potato salad and I’m not, but I don’t mind the green onions so this is a great potato salad that satisfies both of us. Absolutely delicious…this will definitely be my new potato salad recipe!!

Highly recommend this recipe. I grilled some awesome burgers and this potato salad topped it off. Add just a little more mustard that what is requires. I also added 6 green onions rather than 4.

I found this recipe on the Hellman’s website. Bobby’s variation there was a little different, however excellent. The difference there was just the dijon mustard and no whole grain mustand, cilantro in place of the parsley and finely diced jalapeno pepper. Absolutely delicious and will make it again and again.

I love potato salad but I’ve never been a big fan of the egg/mayo drowned potato salads…but this one is great! Just a touch of mayo as a base and the vinegar and mustard really shine through! Making this tonight with some burgers and corld salad for some friends! So easy and quick!
