Ingredients
- 6 slices microwave ready-crisp bacon
- 1 (16-ounce) bag frozen green beans
- A drizzle extra-virgin olive oil
- Salt and pepper
Instructions
- Place bacon between paper towels and microwave 60 seconds on high. Cool bacon and chop or crumble it up.
- Place green beans in a bowl and drizzle with extra-virgin olive oil, salt and pepper. Cover the bowl loosely with plastic wrap and microwave green beans on high for 5 minutes, stir and cook 5 minutes more. Remove wrap and top green beans with crumbled bacon.

We thought these were great!!! Plus, they’re so easy and quick to make. I added some frozen baby pearl onions (since another reviewer suggested adding onions. Next time (and there definitely will be a next time!, I am going to add some chopped red onion. My husband is a picky eater and he said they were the best green beans he’s had in a long time! What is microwave ready-crisp bacon? Has it been already cooked in the microwave, thus making it crispy? They don’t sell “crispy” bacon at my local supermarket! It’s either maplewood, or smoked or somesuch. Darn, another RR recipe I can’t make.
As a college student, it can be difficult to eat healthy, that’s why I loved this quick and easy recipe! My boyfriend and I added some garlic for extra flavor, and opted to fry up some bacon instead of buying ready-crisp bacon. The outcome was delicious, I’d definitely make this again!
This is a great way to take something that is good for you, and make it even better by adding lots of fat via the bacon and olive oil. Way to go, Racheal, you are changing the weight America eats.
I thought the recipe was WONDERFUL, fast and VERY tasty. I would only make one change the next time and that is to add a little onion. But, that’s my preference. The recipe in itself was MARVELOUS!

I was leery about frozen vegetables but tried this anyway. I needed some new veggie ideas with a picky 30 year-old. This was soooooo easy and surprisingly tasty! My son ate a full serving of them and then promptly puked it all up. Very quick to make, almost effortless.
