Mashed Sweet Potatoes and Carrots

Ingredients

  1. 2 large sweet potatoes, peeled, cubed
  2. 4 large carrots, peeled, sliced
  3. 2 garlic cloves, peeled
  4. 1/4 cup whipping cream
  5. 2 tablespoons butter
  6. Salt and freshly ground pepper

Instructions

  1. Cook potatoes, carrots and garlic in large pot of boiling salted water until very tender. Drain; return to same pot. Mash with potato masher. Add cream and butter and mash until smooth and creamy. Season to taste with salt and pepper.

Really loved this recipe. I used a can of Coconut Cream instead of whipping cream and extra butter. I couldn’t stop eating it. Kept going back for just another spoonful! Thanks for sharing!!

This recipe is tasty and super easy.
To improve the healthiness, I steamed the carrots and sweet potatoes. I gave the carrots a five minute head start, and then added the potatoes. I steamed them together about six to eight minutes more.
Then instead of heavy cream and butter, I used 1/4 cup of low fat buttermilk. Seasoned with salt, pepper, and a little nutmeg.
Viola! Delicious.

I made this for dinner tonight– yum! I didn’t use carrots though, just three sweet potatoes. It was really creamy and buttery with that great sweet potato taste. I will be making this for Christmas dinner. Could substitute milk for the cream for a healthier alternative.

This recipe is really good. I might suggest boiling the carrots for a couple of minutes before adding the potato- I put them in at the same time and the potato was done way before the carrots. Might depend on how big the pieces are. It tasted great! Thanks!

I used pre-packaged peeled/cut yams, a bag of small carrots and followed recipe directions, plus added a teaspoon of cayenne pepper! They were a hit, have made them twice in one week by popular demand!

I thought it would be a little sweeter. But very good, better than normal mashed potatoes. The recipe doesn’t make very much though, and it might could use a little more butter and/or cream. I’ll definitely make it again.
