Marinated Tomato Salad with Herbs

Ingredients

  1. 6 to 8 ripe tomatoes
  2. 4 green onions
  3. 1 cup extra-virgin olive oil
  4. 3 to 4 tablespoons balsamic vinegar
  5. 2 tablespoons brown sugar
  6. Salt and freshly ground black pepper
  7. Handful fresh parsley leaves, lightly chopped
  8. 12 fresh basil leaves, chiffonade

Instructions

  1. Cut the tomatoes into 4 wedges, then cut the wedges in half and add to a bowl. Lop off the tops of the green onions, then slice the white and mostly light green parts really thin. Add to the tomatoes.
  2. Add the olive oil, balsamic vinegar, brown sugar, dash of salt and pepper to a jar. Screw on the lid and shake to combine. Pour the dressing over the tomatoes and toss.
  3. Add the herbs and gently toss to combine. Cover and refrigerate for a couple of hours before serving.

Great salad! After reading the reviews, I did reduce the oil as advised and had crumbled feta available for anyone who wanted it. Everyone used the feta and loved it. Beware though, this salad doesn’t last long in the fridge, so eat it up quick or reduce the amount you make.

Yum, yum, yum!! I crumbled in a little feta, reduced the oil to 1/4 cup and it was just perfect.

I wasn’t sure I wanted to put my tomatoes in the fridge, so I mixed it up and just let it sit on the counter for 30 minutes while I grilled our meat for dinner.  I added diced cucumber and feta, but made the dressing exact to recipe.  Delicious!

I Hated fried green tomatoes as a kid. It smelled fab so I would try it everyone my made it. I would spit it out. My roommate asked me to make these. Again, it smelled fab, so I tried it. I ate half of them with stars in my eyes!!

I did add some cayenne, onion powder and garlic powder to the cornmeal mix.
