Lime Rice Pilaf

Ingredients

  1. 2 tablespoons butter
  2. 1 small onion, peeled, finely chopped
  3. 2 cups long grain white rice
  4. 3 3/4 cups vegetable or chicken stock
  5. 1/4 cup fresh lime juice
  6. 2 teaspoons grated lime peel
  7. Chopped fresh parsley or cilantro

Instructions

  1. Melt butter in heavy large saucepan over medium heat. Add onion and saute until tender, about 10 minutes. Add rice and stir to coat. Add stock, lime juice and lime peel. Bring to boil, stirring occasionally. Reduce heat to low, cover and cook until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat and let stand covered 5 minutes. Season to taste with salt and pepper.
  2. Transfer rice to serving bowl. Sprinkle with parsley or cilantro.

Great flavor! I used brown basmati rice and veggie stock, It took longer than the 20 minutes cooking time, but that’s ok.

I didn’t use any lime peel and just used the juice of one lime. It came out great – nice subtle flavor, not overpowering. We put it in burritos and it tasted just like you get in the restaurants!
