Lemon Broccoli Rabe

Ingredients

  1. 1 gallon water
  2. Salt
  3. 2 bunches broccoli rabe, chopped
  4. 3 tablespoons extra-virgin olive oil
  5. 2 cloves garlic, minced
  6. Pinch red pepper flakes
  7. 1/4 cup grated fresh Parmesan
  8. 1 lemon, zested
  9. Sea salt and freshly ground black pepper

Instructions

  1. In a large sauce pot, bring 1 gallon of salted water to a boil. Add the broccoli rabe and blanch for 2 minutes. Drain.
  2. Meanwhile, heat a large skillet over medium-high heat. Add oil, garlic and red pepper flakes. Allow garlic to brown.
  3. Add broccoli rabe to skillet with toasted garlic. Toss to combine. Toss in Parmesan and lemon zest. Season with salt and pepper. Cook over medium-high heat for 2 to 3 minutes.

I’m new to broccoli rabe, so the first bite is still a bit strong! As others have said, this worked really well with the garlic and lemon to cut down on some of the bitterness. I followed the instructions exactly and it was also perfectly cooked! Really enjoyed it and will make it again.

Really enjoyed this. I went a little light on the oil and used the juice of half a lemon to compensate. It worked really well. The lemon really cuts down the bitterness of the broccoli rabe. I was surprised as I cook with broccoli rabe often and it is often quite over powering.
