Ingredients

  1. 2 pounds skirt steak, cut into 1/2-inch dice
  2. Kosher salt and fresh cracked black pepper
  3. 4 to 6 slices thick-cut applewood smoked bacon, 1/4-inch diced (about 1 cup)
  4. 1 1/2 cups 1/4-inch diced red onion
  5. 1/2 cup seeded and finely diced jalapenos (2 medium)
  6. 3 tablespoons minced garlic
  7. 1 teaspoon kosher salt
  8. 2 teaspoons fresh cracked black pepper
  9. Apple cider vinegar, best quality
  10. 1 (15-ounce) can cannellini beans, with liquid
  11. 1 (15-ounce) can lima beans, with liquid
  12. 1 (15-ounce) can kidney beans, with liquid
  13. 1/3 cup molasses
  14. 2 tablespoons dark brown sugar
  15. 3 tablespoons soy sauce
  16. 1/3 cup ketchup
  17. Crusty bread, for serving

Instructions

  1. Sprinkle the steak with salt and pepper. Set aside.
  2. In a large Dutch oven (preferably enameled cast iron) over medium-high heat, render the bacon until just starting to crisp, 6 to 7 minutes, stirring as needed. Remove 1 tablespoon of the bacon fat and set aside. Add the onions and jalapenos and cook until the onions are translucent, about 5 minutes more. Add in the garlic cook 1 to 2 minutes. Remove all from the pot to a small bowl. Set aside.
  3. Wipe down the inside of the pot, add the reserved 1 tablespoon bacon fat and, when starting to smoke, add in 1/3 to 1/2 of the steak and cook, stirring as needed until just starting to brown, about 8 minutes. Remove to the vegetable bowl, repeat with the remaining steak.
  4. Once the steak is cooked, deglaze with 1 tablespoon apple cider vinegar. Then return all the vegetables and cooked steak back to the pot and add in the beans, including the liquid in the can. Add the molasses, brown sugar, soy and ketchup, and stir to combine. Bring to a simmer over low heat, cover and cook for 2 hours, stirring every 20 to 30 minutes to assure that the bottom doesn’t stick.
  5. Add in more apple cider vinegar, a few tablespoons at a time to personal taste, and serve with crusty bread.

I’VE made this a number of times. Little people can’t take to much spice so trial and error has me at 1 1/2 seedless chopped Jalapeños as opposed to the 2 thee recipe calls for. Anyway this recipe rocks! Thanks Guy

Crowd pleaser, but not what I was expecting: texture is that of a stew and not baked beans; not spicy AT ALL even though I diced two whole jalapeños; and I used Pinto beans instead of Lima beans, since I haven’t seen a Lima bean since I made one grow into a plant in 2nd grade.  This dish was very hearty, and easy to make.  I would make it again if requested, but Guy’s Dragon Breath Chili blows this away and is similar in flavors.

Excellent. As usual I had to add my own touch to them, added some spicy mustard, turmeric and broke up the bacon into small pieces and put back in. I had people taking home doggie bags of beans lol. If you want to add a little more kick add a habanero. This is a great recipe That I will be making again and again this summer.

Hands down the best of all the TV recipes I have ever made, and I cook a lot. This is my husband and son’s favorite meal of anything that I make…crazy good. I sometimes make in the crock pot on low for 10 or so hours, and it’s perfect to come home to at the end of a long, cold workday.

I’ve made this recipe twice now and it’s gotten rave reviews. It might be because I doubled the bacon…by accident :- I didn’t read that it was only 4-6 slices of bacon. For whatever reason I cooked the whole package! It created some extra fat which I drained off but boy was that extra bacon a big hit with the crowd. I’m always looking for new bean, stew and chili recipes and this one is a keeper!

Baked beans? or Chili? Either way, this is a delicious and unique dish, very hearty with all the beef and beans. The kids loved it even after we told then that yes, those ARE lima beans. My only complaint is that the recipe didn’t make more. Double it up and eat it all week!
