Instructions

  1. Whisk 3/4 cup cornmeal, 1/4 cup flour, 2 tablespoons sugar and 3/4 teaspoon each baking soda and salt in a bowl. Stir in 1 beaten egg, 1/2 cup each buttermilk and corn kernels, 1 minced jalapeno, 4 minced scallions, and pepper to taste. Deep-fry spoonfuls of the batter in 350 degrees F vegetable oil until golden, 2 to 3 minutes.

YUMMMY!!!  These are by far the best hush puppies I’ve ever eaten. And they were super easy.

Made these according to instructions. The batter is too loose to come up with a consistent hush puppy. There is too much baking soda and salt and not enough sugar they come out too salty. I will not make these again.
