Homemade Applesauce

Ingredients

  1. 2 large navel oranges, zested and juiced
  2. 1 lemon, zested and juiced
  3. 3 pounds Granny Smith apples (about 6 to 8 apples)
  4. 3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
  5. 1/2 cup light brown sugar, packed
  6. 4 tablespoons unsalted butter
  7. 2 teaspoons ground cinnamon
  8. 1/2 teaspoon ground allspice

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.

I’ve made it many times but I cut the sugar down to 1/4 cup, and the Allspice down to 1/4 tsp. It’s great cold as applesauce or warm as a snack or compote served as a side dish. I make a double batch and freeze in Rubbermaid hard plastic containers. Highly recommend and oh so delicious.

This is a great recipe. I used 2 bottles of unsweetened applesauce to add to this. I bagged it in 16 oz freezer bags and it held up to freezing. I only froze this for 3 weeks. We liked it so much. We ate all of it. I loved the taste of orange peel in this and it really added a lot of flavor.

The simple ones are the best.  There is plenty of room to adjust for variance in ingredients and to personal taste.  I had a bag of lunch box honeycrisp we had to use up and picked up some granny Smith which we thought were a bit less tart than expected.  So we decided to go without any added sugar until the end.  The first tasting was good. Not sure of the butter really added anything special to the final result.  I was ready to leave it without adding any sugar but ended up compromising and added just 2 level tablespoons and let it sit on the stove top for a few minutes and it was spot on.  It’s another winner in a long list from Ina!

Just made this tonight after being gifted an insane amount of apples, and this is definitely going to be a keeper! Served it warm with vanilla ice cream, and it was absolutely a perfect light dessert.
