Ingredients
- 1 1/4 pounds, 4 large handfuls, haricots verts – thin green beans, trimmed
- 2 tablespoons light in color oil, such as vegetable oil or peanut oil
- 2 tablespoons sesame seeds
- Salt
Instructions
- Bring 2 inches water to a boil in a large skillet. Salt water once it comes to a boil. Blanch haricots verts in boiling water 2 minutes, drain and cool. Pat beans dry on paper towels.
- Dry skillet as well and return to heat. Heat pan over high flame and add oil to coat the bottom of pan. Add beans to hot oil and stir fry using tongs to move and toss the beans until they are charred and very hot, 3 to 4 minutes. Sprinkle beans with sesame seeds and cook 30 seconds more, to both toast the seeds and distribute them. Pile fried beans onto a serving plate and sprinkle with salt, to your taste.

Well, i do not think that charring haricots is a good idea. One looses its freshness and doesn’t get too much instead. This dish is not a defeat, not at all, but also not the best option fo haricots
I made these to go with the cheesburger salad. I used frozen whole beans because that’s what I had. They were a bit soggy, but I think it’s because I used frozen beans. I want to try them using fresh beans next time. They were very tasty, tho!! I made russian dressing to dip in. Not sure fying beans is very healthy, but it was a fun indulgence.
This is a good substitute for french fries for those on a low carb diet.
Great old French and New Orleans dish. This rendition is somewhat bland, i.e., it can benefit from some more seasoning. I tried Creole seasoning and the result was superb!

I couldn’t find the haricots verts, so I used regular green beans. The flavor is really good, but mine didn’t come out as crispy. The sesame seeds definitely made them yummy. Now I just have to figure out how to not burn myself when adding the beans to the hot oil!
