Ingredients
- Dressing, recipe follows
- 6 red potatoes, par-boiled and quartered
- 3 teaspoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 teaspoons red pepper flakes
- 1/2 Vidalia onion, thinly sliced
- 2 strips bacon, cooked and crumbled
- Chives, chopped, for garnish
- 1/4 teaspoon stone-ground mustard
- 1/4 cup mayonnaise
- 2 teaspoons red wine vinegar
Instructions
- Preheat grill to medium.
- Place potatoes into a large bowl. Drizzle with olive oil and add salt, pepper and red pepper flakes. Combine until well coated.
- Put the potatoes directly on the grill and close grill top. Turn potatoes onto the other side after 3 to 5 minutes. When ready, place back into the bowl and add the onions and bacon. Drizzle potatoes with dressing, toss and serve garnished with chives.
- Whisk ingredients together in a bowl. Set aside.

I’ve made this about six times since I found their recipe. Today will be seven. Ladies and gents, this is a great recipe!!! The only thing I do differently is cut the onion and potatoes (after grilling) a little smaller. SO GOOD!

Delicious! Huge hit at BBQ. Consider decreasing red pepper amount– it was pretty spicy and our family enjoys spicy stuff!

This is one of the best potato dishes I have had. We’ve made it twice and the second time we did cut the red pepper flakes in half because it was a little too much heat for us and we also put the onions on the grill to get them browned as well. It is soooo good and something we will definitely be making again and again. Thank you Neeleys!
This was a great recipe, though I did alter it a lot based on the ingredients I had at home. We used about 5 large potatoes and half of a sweet onion. We grilled both to sweeten up the onion a bit, though if you’re using a sweet onion the raw bite is nice. Instead of red wine vinegar I used white wine and basically made it to my taste, which means I used far more vinegar and mustard and just a touch of sugar. I loved the red pepper flakes and the smokiness on the potatoes. I think this would be a run recipe to try with other spices… maybe smoked paprika, chipotle chili powder or curry.
