Ingredients
- 4 ears corn on the cob, husks removed
- 1/2 cup Cilantro Pesto, recipe follows
- 1/4 cup grated Cotija cheese (feta or Parmesan may be substituted)
- 1 bunch cilantro, leaves washed and drained
- 3/4 cup canola oil
- 1/4 cup Roasted Green Pumpkin seeds, recipe follows
- 1/2 cup grated Cotija cheese (can substitute feta or Parmesan)
- 2 cloves garlic, chopped, optional
- 1/2 cup green pumpkin seeds
- 1 tablespoon canola oil
- 2 teaspoons chili powder
- Salt
Instructions
- Heat the grill to medium-high. Once hot, lay the corn across the grill. Rotate corn every 3 minutes until all sides are evenly golden and slightly charred, about 15 minutes.
- Put the corn on a platter. While corn is still hot brush the corn with cilantro pesto and then sprinkle with the Cotija cheese. Serve.
- In a food processor add the cilantro, canola oil, pumpkin seeds, Cotija cheese, and garlic. Puree until smooth but not liquid. Taste for seasoning. Cooks Note: Usually you do not need salt because of the salt in the roasted pumpkin seeds and the cheese. Set aside.
- Yield: 3/4 cup
- Preheat the oven to 450 degrees F.
- Add the pumpkin seeds, canola oil, chili powder and salt, to taste, in a small bowl. Mix well to combine.
- Spread the pumpkin seeds out evenly on a cookie sheet or baking pan. Bake, stirring the seeds every few minutes until golden brown, about 10 minutes.
- Set aside until cool.
- Yield: 1/2 cup

The flavors are wonderful but way too much oil for the recipe! I have made pestos before and Ithought this sounded like a bit much but proceeded anyway. Should have used no more than 1/2 cup instead of 3/4. I just put it all in my colinder and let it drain a few minutes and it was fine. Letting it sit overnight and will use tomorrow on the grilled corn!! Love Jeffrey and thought I would like Melissa but she is pretty boring, I must say. I would definitely prefer a show with Jeffrey! 🙂
Had company last night and made this. OMG Wonderful!!!!!!!!!! I knew it would be. I’ve made several of Jeffrey’s recipes, and they never disappoint. I am still in shock that he didn’t win last season, what a mistake. What a talent he is!!!! I have no interest in this seasons “The next Food Network Star” or any other from now on. It had to be fixed or something, as there is no way Melissa should have won over this guy. She doesn’t have the creativity or the star power. I’ve tried some of her recipes, and they’re good, but not better than I could have gotten out of any run of the mill cook book. What a shame!!!!!!
I think if the food network is smart, they’ll give him a show after all.
Jeffrey is back and wonderful. Anything you make is a hit in this house. I can’t see him in any other venue.but as a chef. Have watched Melissa once and can’t stand her. This chef needs a show ….. because he’s a real chef … not a $10 cook. This recipe rocks. We had it today.
It was sooo great to see Jeffrey Saad again. I fell in love with his cooking and the “Star Power”, in the first episode of the last season. Later, Melissa grew on me as well. I suggested have in the past suggested (before the finale) that they both should have won, or at least the one that didn’t win should have their own show as well. This man is sooo talented. PLEASE use his abilities, and let us use his excellent recipes. I don’t even need to try this to see that it is scrumptious. I will however use it when I make corn next, and I know it will be a hit.
Get flavor and nice table presentation. Love the corn. Jeffery should have wow the NFN star you all made a very big mistake. I can’t watch Melissa any more What a waste of time watching her shows. She bring nothing new to the table. Sorry but Jeffery needs a show on FN. The last two yrs. you pick the wrong person for a show Lisa should have won over,Big Daddy, he also bring nothing new to the table. BIG MISTAKES<
I just saw this on tv this morning and it looked so tasty that I thought I’d make it today. I am so glad I did. It is so good. This is quick and easy. A summer must have for corn! I also agree with the other reviewer….Jeffery needs his own show! He is a natural for tv and he appeared to be in his comfort zone during the show. I would definitely watch his shows!
It is delicious !!!!!!!!!!! This truly has a unique and distinctive flavor. I must say I enjoyed watching him with Bobby Flay, he is a great guy. Please give him his own show. I would watch him like I do some of my favorites. Giada, Bobby and Tyler.
