Ingredients
- 2 cups arugula, about 3 handfuls
- 1 lemon, zested and juiced
- 3 tablespoons pine nuts
- Salt
- Freshly ground black pepper
- 1 small garlic clove
- 1/4 cup extra-virgin olive oil
- 1/4 cup grated Parmigiano-Reggiano, a handful
- 1 head radicchio, cored and chopped
- 2 hearts romaine lettuce, chopped
Instructions
- Place the arugula, lemon zest and juice, pine nuts, salt and pepper, to taste, and the garlic in the bowl of a food processor and pulse to grind. Let ‘er rip and add the extra-virgin olive oil in a slow steady stream. Once all the oil is in, add the cheese and pulse to combine. Arrange the radicchio and romaine in a salad bowl, top with dressing and toss to combine.

My family Loved this recipe. My twelve year old wanted to make the dressing again tonight.
Wa-hoo, this is now a kitchen staple in my house! After reading the reviews before making, the “baby spit-up” comment was well said. First effort was great, but then added a (leftover) 1/2 of a shallot to the blend and added a fine diced red bell pepper for garnish.

Pine nuts, garlic, arugula… need to say more?
I guess maybe it tastes somewhat OK, but sadly it just looks plain awful! The pesto itself is a nice quick ‘n easy recipe but it just does not work as a dressing for salad.
Um, I made this recipe and usually Rachael Ray’s recipes are great. However,this one wasn’t so good. It reminded me of the split pea baby spit-up on lettuce. I guess it’s back to the drawing board.
Excellent! Super flavorful, zesty and healthy! I made double to keep through the week for other salads too.
This was the first time EVER that my eight year old son has eaten more than a ‘no thank you’ bite of salad. He loved the dressing. I loved the dressing. Even my 6 year old liked it. She and I made the dressing together. We had a great time.
I even served it in a green bowl too.
