Green Beans and Bacon

Ingredients

  1. 2 1/2 pounds green beans, trimmed
  2. Kosher salt
  3. 1/2 pound bacon, roughly chopped
  4. 1 small yellow onion, finely chopped
  5. 3 cloves garlic, minced
  6. 1 teaspoon red pepper flakes
  7. 1/2 cup chopped toasted pecans
  8. Juice of 1/2 lemon
  9. Freshly ground pepper

Instructions

  1. Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  2. Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. Sprinkle in the garlic and red pepper flakes and saute until just fragrant, about 1 more minute. Add the reserved green beans and the pecans and cook until heated through, 5 to 6 minutes more. Return the bacon to the pan, pour in the lemon juice and toss. Season with salt and pepper.

Where to start? My family and I love green beans. Crunchy, fresh al dente green beans. I tried this as a change from the norm and none of us (2 adults and 3 kids) could eat a normal portion. It makes me wonder/cringe why Americans feel obliged to add bacon fat to everything to “make it better”, because in our families opinion this is not. We picked out the bacon and left the actual good stuff on the side because it didn’t taste like a green bean.

Loved that the beans stayed a vibrant green color while perfectly cooked. Didn’t feel the need to include the pecans since it was delicious without them. This was such a unique and flavorful side dish to a tasty pan-seared steak with mushroom sauce, and a piping hot baked potato. Wish I could include a picture. Definitely worth the time and effort.
