Garlic-Cheese Mashed Potatoes

Ingredients

  1. 3 pounds red bliss potatoes, quartered and boiled fork tender
  2. 2 cups heavy cream
  3. 1 stick butter
  4. 6 cloves garlic smashed
  5. 8 ounces shredded Cheddar
  6. Cracked peppercorns
  7. Kosher salt
  8. Chives, for garnish

Instructions

  1. Boil potatoes off in a large pot of salted water until tender. Drain the water and place potatoes back in pan.
  2. In a large saucepan, heat heavy cream, butter and garlic to a light simmer. Once cream starts to simmer, turn off the heat and add to the potatoes. Mash together. Fold in cheese, peppercorns and salt, to taste. Garnish with chopped chives.

I would like to make this recipe, but I am confused regarding the comments, on whether the corrections have been made to the recipe or not?

My 8yo and 4yo LOVED these – I think the 4yo had 5 helpings! To me, they were a little bland, but a little salt perked them right up. The cheese we used was Dubliner, which added a nice sharp flavor. Next time I try this, I’ll either saute the garlic or roast it up – I like a bolder garlic flavor. Another keeper for us!

These potatoes were really great! At first I had potato soup becuase the amount of liquids was wrong, but being that I am a busy mom I had plenty of instant potatoes on hand, so I just added a packet of cheesy instant potatoes and it worked just fine! I added the cheese on top and baked them just like on the show and they turned out perfect.

I adjust the quantity of the cream & butter and my family loved the dish. I like not having to peel the potatoes. I used baby reds as well.

I think the cream amount (1 qt.) is a typo … 1 pint works much better, so stick with 1 pint for this amount of potatoes. Also added extra cheese on top of casserole dish and baked off a little more. ALWAYS worth the calories, so if you’re on a diet, don’t make these and whine after the fact.

i also made this dish before looking at reviews i only poured half of mixture in and it was still too soupy had to cook the other 2 pounds in the bag just to make it edible and it was still a little soupy and still have half of the heavy cream mixture that i have too throw away, also the recipe never says when to add cheese i.e to heavy cream or when mixing potatoes wasted money on this one someone needs to correct this recipe
