Ingredients
- 1 pound fingerling potatoes
- Salt
- 4 shallots, sliced
- 1/4 cup olive oil
- Freshly ground black pepper
- 1 cup heavy cream
- 1/2 stick butter
- 1 tablespoon minced garlic
- 1/4 cup chopped chives
Instructions
- Preheat the oven to 450 degrees F.
- Wash the potatoes. Add the potatoes to a large saucepan of salted water over medium heat. Bring to a boil and cook the potatoes until tender, about 10 to 12 minutes, Drain potatoes.
- In a large bowl, toss together the potatoes, shallots, olive oil and salt and pepper, to taste. Add them to a quarter sheet pan and bake in the oven for 15 to 20 minutes. Remove the potatoes from the oven, allow to cool and then smash.
- Warm the cream, butter and garlic in a medium saucepan over medium heat. Add the smashed potatoes and season with salt and pepper, to taste. Stir to combine, then transfer the potato mixture to a serving bowl and garnish with chives.

Seriously, who are you? Can you do no wrong? Everything I have ever made of yours is just right up my alley. The family, even picky kids, liked these yummy potatoes. I was surprised at how mild the outcome was, might add more garlic next time, otherwise, perfection on a plate!
Made the entire meal for Father’s Day dinner last night. The potatoes were my favorite…and just about everyone else’s as well! The only thing I changed was to roast some whole garlic cloves with the potatoes and shallots. We loved the mellow flavor of the roasted garlic. The whole meal was delicious!
I have tried mashed potatoes so many different ways, but this recipe goes to the top of the list! I love the flavors and it was so good that my picky daughter didn’t even complain about the onions. She was helping me put the dish together and as we mixed the potatoes in preparation for the oven she said that she could tell this would was going to be a good dish. So simple. I followed the recipe exactly.
Just made this for Father’s Day and everyone loved it! Not for the calorie counters in the family. Worth the effort….yum.
I’m slightly confused. I believe I saw Aaron roast those potatoes and shallots, smash them and then add the remaining ingredients. The printed recipe is certainly another way to do it but I think I like what I saw on the show best. Delicious.
This is the BEST potato recipe! I am such a potato fan, and this just takes them over the top! What Flavors! WOW! I love that you roast them after boiling them. I roasted mine a little longer to get more color on them. I used yukon gold potatoes about 1.5 lbs but kept the same amount of liquid. It seemed like there was too much liquid but the potatoes absorbed it all and WOW! My husband even said they were the best ones I ever made! You Go BIG DADDY!
