Ingredients
- 3 tablespoons white wine vinegar
- 2 teaspoons sugar
- 1/3 cup extra-virgin olive oil
- 1/2 pound shredded slaw salad mix
- 1 bulb fennel, trimmed, reserve a handful of fronds
- 4 ribs celery from the heart, thinly sliced on an angle
- 10 leaves fresh basil, thinly sliced
- Salt and freshly ground black pepper
Instructions
- Mix vinegar and sugar in the bottom of a bowl and whisk in oil. Add slaw to bowl. Chop fennel fronds and add to cabbage. Quarter the fennel bulb, cut away the core and thinly slice, add to cabbage. Add the celery and basil to the salad, toss to combine, season liberally with salt and pepper, to your taste.

For my first time eating fennel, this was a great recipe. I put this on top of a BBQ pulled pork sandwich and it added great flavor! Will definitely make this again.
Yummy! I did add more vinegar, but that’s a personal preference.
We loved it! Did not have fresh fennel, so substituted fennel seeds and forgot to add basil. Also, used only two stalks of celery, but it was still excellent. Will definitely make again.
This is the best slaw ever! The fennel brings an earthiness while the celery holds a crunch. Very light.
I just watched this episode, with the bacon pasta and fennel slaw. I was sceptical, since I’d never had raw fennel, but I love the flavor of it grilled. The market had no decent basil, so I used a heaping TB of pesto from the fridge, then followed the recipe just as Rachael did. I took the advice of others, and made it several hours ahead so the flavors could develop. It was such a treat! Perfect with the peppered bacon pasta dish.
This is such a nice change from the regular slaw i usually make, will make this again and plan on sharing it at my next cookout i attend! thanks Rachel! keep on rocking and rolling out those yummy dishes and i will keep trying new things on my family and friends!
I love fennel, so was excited to try this. At first I was disappointed because it seemed bland, but I had enough for the next day and it was fabulous! The veggies needed time to absorb the dressing. Thanks Rachael. Another good one!
This salad was easy to prepare, very inexdpensive, but did not have a memorable taste. Probably will not make again.
I have grown really tired of the old mayonnaise-style coleslaw and watched Rachel make this easy alternative. It was so good! It reminded me of the salads I tasted in Germany. Crisp, fresh, slightly sweet/tart. Wonderful!
