Easy Pico de Gallo

Ingredients

  1. Salt
  2. Pinch of sugar
  3. 2 medium tomatoes, seeded and chopped
  4. 1/2 medium sweet onion, finely chopped
  5. 1 jalapeno, seeded, ribs removed and finely chopped
  6. 1 avocado, halved, pitted, peeled and cut into small cubes
  7. 1 lime, juiced
  8. 3 tablespoons chopped fresh cilantro

Instructions

  1. In a small bowl, mix 1 teaspoon salt with the pinch of sugar. In a medium bowl, toss the tomatoes gently with the salt mixture. Add onion and jalapeno and combine.
  2. Place the avocado on top of the tomato mixture and squeeze with lime juice to coat the avocado.
  3. Sprinkle on the cilantro, and stir to combine. Serve.

Delicious! I was planning on just making a traditional pico de gallo for the carnitas recipe from this episode and adding sliced avocado. But this recipe with avocado is perfect. Even distribution of the flavors. Plus with the salt and lime, the avocado keeps and does not turn brown.

I’m making the entire meal. I tasted the Pico de Gallo and it’s delicious and the pork shoulder is still cooking in the slow cooker, doing it’s thing smelling amazing. My rice is cooking, everything is coming along wonderfully. I’m sure my family will enjoy the meal! Melissa you’ve given me another treasure to add to my recipe selection.
