Ingredients
- 2 bunches kale, thick stems and ribs removed, leaves coarsely chopped
- 2 tablespoons extra-virgin olive oil
- Salt
- 1/2 a lime
- Parmesan wedge
Instructions
- Preheat the oven to 250 degrees F.
- In a large bowl, toss the kale with the olive oil and a few pinches of salt. Spread out the kale on a large baking sheet; the kale can be piled up a bit. Bake until a little crispy on the edges but still tender, about 20 minutes.
- Remove the kale from the oven. Squeeze lime juice over the top, grate some Parmesan and serve warm.

Tasty! I used a convection oven at 250 degrees and roasted the kale for 40 minutes instead of 20, it got crispier, and didn’t burn 🙂

Didn’t love it. Wondering if there is a different way to eat kale and enjoy it.
A simple but delicious recipe. The olive oil and cheese help mitigate the strong flavor of the kale, while oven roasting gives it a nice crispy texture. Good nutrition as well, light cooking helps release the vitamins. All in all, it’s an excellent side dish. The only disadvantage is that it may not be the easiest dish to reheat.
My whole family loved it. I baked it on low and it came out a little too crispy. I used feta instead of parm and it was delish!
So good….i wanted to lick the bowl….ha!
This was really good. Kids liked it, too. I did it mostly at a higher temp since I was also making something else at the same time that needed a higher temp. Worked just fine.
Mine took way longer than 20 minutes to dry out at this temp… more like 45 minutes!
