Creamy Cucumber Salad

Ingredients

  1. 4 hothouse cucumbers, thinly sliced (3 to 4 pounds)
  2. 2 small red onions, thinly sliced in half rounds
  3. Kosher salt
  4. 4 cups (32 ounces) plain whole-milk yogurt
  5. 1 cup (8 ounces) sour cream
  6. 2 tablespoons champagne vinegar or white wine vinegar
  7. 1/2 cup minced fresh dill
  8. 1 1/2 teaspoons freshly ground black pepper

Instructions

  1. Mix the cucumbers, red onions, and 1 1/2 tablespoons of salt in a bowl. Pour them into a colander and suspend it over a bowl. Wrap the bowl and colander with plastic wrap, and place in the refrigerator to drain for at least 4 hours or overnight. Discard the liquid that collects in the bowl.
  2. Pour the yogurt into a sieve lined with a paper towel and suspend it over another bowl. Wrap the bowl and sieve in plastic wrap and refrigerate for at least 4 hours or overnight. Discard the liquid that collects in the second bowl.
  3. When the cucumbers are ready, roll them up in paper towels or a kitchen towel and press the towel lightly to remove most of the liquid. Place the cucumbers and yogurt in a large bowl with the sour cream, vinegar, dill, 2 teaspoons salt, and the pepper. Toss well and refrigerate for a few hours to allow the flavors to blend. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper and serve chilled.

My Hungarian relatives salted sliced cucumbers and onions, put in colander set into a bigger bowl. Then a plate put on top with an old cast iron iron used as a weight on top of the plate. They all peeled the cucumbers then used a fork to run down each cuke all around. Makes like a ruffled edge to the cucumbers! Of course yogurt not used-sour cream, sugar, vinegar, dill. By the way in the morning the cucumbers are rinsed then put on long flour sac cloths-rolled up then twisting the ends then circular turning in fast motion. The cukes are very dry but crisp after all that!

I have made this recipe and thought it was fantastic but for those who feel it’s too salty…
My impression is Ina is using Kosher salt as opposed to regular table salt. If so it should be noted in the recipe. Here’s a conversion chart I refer to when I read a recipe calling for large amounts of salt:
1 part Morton table Salt =
1 ½ parts Morton Kosher Salt =
2 parts Diamond Crystal Kosher Salt

Absolutely Delicious BUT- Use 1/2 of the yogurt. I used greek yogurt. Be careful how much salt you put on your cukes/onions or they will be too salty. I did half of this recipe to bring to a 4th of July bbq. The BEST cucumber salad I’ve ever had. The extra effort is totally worth it! Thanks Ina!

So yummy! I used creme fraiche instead of sour cream. Used mandolin to cut cucumbers and red onions super thin and I definitely did not use all the salt in the recipe. It was so good! I used Greek yogurt so I only drained the cucumbers and onions with salt but for less than 4 hours. It was a winner!

Man this had a lot of steps that I wanted to skip, but I’m glad I didn’t because it turned out so delicious. It takes quite a bit of effort for just a cucumber salad, but the result is so very yummy.

It was a little too much yogurt & sour cream to eat as a straight salad, but good on crackers. I thought the final salad was a little on the salty side, but my wife thought it was perfect. This recipe makes a huge amount, so this dish would be great for a party or large group.

Creamy goodness. Nice on tomatoes or salad. I’d suggest 1/2 the amount of sour cream.
