Ingredients

  1. 1 pound fresh organic spinach, soaked several times in salt water to remove grit, well-rinsed and dried in a salad spinner
  2. 4 ounces bacon (about 4 strips)
  3. 1/2 cup heavy cream
  4. 1/4 cup Parmesan
  5. Salt and pepper
  6. Freshly ground black pepper

Instructions

  1. Steam spinach until tender and set aside to cool in a colander placed over a bowl to catch any excess moisture. (Steaming preserves vitamins, so since it cooks quickly, be careful to avoid overcooking the spinach, which will negate that advantage.)
  2. Cook bacon until crispy in a saute pan and remove to paper toweling to drain and cool. Pour most of the fat out of the pan and add the cream to the same pan over low heat, allowing to reduce by about one-third.
  3. While the cream is reducing, finely chop the now cooled spinach, and return it briefly to the colander placed over a bowl. Cut the bacon strips into 1/4-inch pieces.
  4. Whisk the Parmesan into the reduced cream, and season with pepper. Since the cheese will add saltiness, add salt only if needed. Fold the well-drained spinach and bacon into the sauce. Transfer to a serving dish.

I made this with kale instead of spinach but kept everything else the same. Oh WOW.

Very tasty and I even eliminated the bacon.

Love this recipe. Very easy to make and really good flavor. I’ve tried other recipes for creamed spinach and they all turned out dry and clumpy. This is definitely a keeper.

Makes a wonderful side dish!

Tasted yummy. Will do again. Was yummy for those who don’t like to consume spinach on a daily basis.

I’ve used plenty of highly-rated recipes from the Food Network in the past with great success, but this one was really disappointing. I should have just went to Boston Market and picked up some of their creamed spinach instead! The cream part of this recipe turned out way too watery and didn’t stay inside the spinach – it ran all over the plate when it was served. The only saving grace was the bacon, which isn’t saying much since anything with bacon in it would taste good.

I can’t believe how easy and tasty this dish was to make. It reminds me of a chicago steak house creamed spinach!
