Ingredients

  1. 1 1/2 cups rice, cooked
  2. 1 1/2 cups heavy cream reduced by 1/2
  3. 2 poblanos, roasted, skins removed, and chopped
  4. 3 scallions, sliced
  5. 1/4 cup freshly chopped cilantro leaves

Instructions

  1. In a medium serving bowl add the rice, reduced cream and the poblanos. Garnish with scallions and cilantro and serve.

For some reason, i could not find recipes from this episode so i made it from memory and it was FANTASTIC. I used significantly less cream… i usually try to limit this luxury.

Made this again tonight using corn instead of rice. I used only about 1/2 to 3/4 c of cream. It was delish!

I cannot rave enough about this. I took the time to reduce the cream…it took about 30 minutes…it was fantastic. My 12 year old daughter loved it also. It did, however, need salt.

The creamed part seemed odd to me, but it looked good on the show, plus I love poblanos, scallions, and cilantro. I forgot about reducing the cream, so I just added less because 1 1/2 cups probably would have made it too mushy. Turned out absolutely delicious! I was also surprised it went so well with the honey soy pork chops from the same episode. I can tell it can go well with many other dishes that I enjoy.

It’s weird but I crave this rice. I’m gonna stuff it in some peppers. Yum, Bobby serves this rice at his Mesa Grill restaurant, with the mahi.

With the exception of preparing the green pepper, this is a quick rice dish. I and 2 daughters made a second rice by using Coconut Milk (can from the store) as part of necessary liquid. Delicious. Once again, Bobby gave us a solid dish.
