Ingredients
- 4 tablespoons (1/2 stick) unsalted butter
- 3/4 cup chopped shallots (3 to 4 shallots)
- 3 cups chicken stock, preferably homemade
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups couscous
- 1/2 cup toasted pine nuts (pignolis)
- 1/4 cup dried currants
- 2 tablespoons chopped fresh flat-leaf parsley
Instructions
- Melt the butter in a large saucepan. Add the shallots and cook them over medium-low heat for 3 minutes, until translucent. Add the chicken stock, salt, and pepper and bring to a boil. Turn off the heat. Stir in the couscous, cover the pan, and set aside for 10 minutes. Add the pine nuts, currants, and parsley and fluff with a fork to combine. Serve hot.

To the person who asked what kind of couscous everyone used I believe it was NOT Israeli couscous which is pearl like. That’s probably the reason yours turned out soupy. The recipe doesn’t state which type of couscous but it should specify.
This was a hit with my husband and 8 yr old. And super easy!
My store didn’t have Currants so I substituted golden raisins. Also, I used whole wheat couscous.

Fantastic, easy recipe and so flavorful. I doubled the pine nuts and used dried cranberries (because that’s what I had). It’s a wonderful, hearty side.
This couscous was THE BEST I’VE EVER MADE !!! One question, what brand of couscous did everyone use ? I used Trader Joe’s Israeli Couscous & it was like soup……..it did not absorb all the broth. And I followed the recipe exactly as written !!! I want to make it again but not the way it came out. Ina you are my favorite chef !!!!!!
I loved the flavor and texture from the pine nuts and dried fruit. This is an interesting side dish that’s easy to make.
Fantastic. I cut down on the onions a bit and used quinoa in place of the couscous. My company loved it.
