Ingredients
- 1 cup water
- 1 cup chicken stock or broth
- 1 tablespoon olive oil
- 1/4 cup finely chopped dried dates
- 1 cup quick-cooking couscous
- Salt and freshly ground black pepper
Instructions
- Bring the water, stock, and oil to a boil in a small saucepan over medium heat. Add the dates followed by the couscous. Cover the pan tightly with a lid, remove from the heat, and allow to sit for 5 minutes. Fluff with a fork and season with salt and pepper, to taste. Transfer to a serving bowl and serve.

Regrettably I didn’t have any couscous so I made it with angel hair pasta instead. Also I didn’t have any dates so I used marinara sauce and it was delicious! I can’t wait to try it with marshmallows.
I made this with raisins instead of dates because i didnt have dates on hand and it was very good. I still want to try it with dates.
Unfortunately the closest thing I had to dates was a box of raisins. I think it still tasted delicious, and my family loved it. I will make this again, next time I’ll use the dates.
I’m a big fan of fruity couscous, so I knew this would be good. It was a hit with the whole family, and went really well with the meatballs featured in the episode.

Again, great hit with the family. I made a few changes, like, added chopped dried apricots and chopped some cashews. Agree that it completely complimented the meal.
