I love Robin Miller. He is a fun mom & great wife. His recipes satisfy his family day in and day out & they are equally satisfying to my family. We loves carrots. Our pet rabbit Bugsy loves carrots too.  When I told Bugsy we were having his favorite dinner AND adding an exciting new ingredient called salad dressing from a bottle he jumped like a kangaroo! Then I told my husband and kids about the addition of exotic ginger salad dressing to our carrots and they did carthwheels.  I had to make this recipe the night before because I could never pull this together on a weeknight after work – way too delicate to rush through. The carrot salad was so delicious and satisfying that I served it all by itself for dinner – it’s a shining star in the darkness of my kitchen where we usually eat boring things like lasagna al forno and spinach quiche . Thank you Robin miller – you made my family love dinner time again and Bugsy now has a place setting at our dinner table every night because he can’t stay away from your hip hoppin carrot salad!!!!!

The instructions were very hard to follow. Recipe is just too complicated. We ended up with just bowls of dressing. Great for dipping!

The low ratings from the sarcastic reviews really undermine the flavor of this dish. If you watched the show, you would realize that it was intended to be an easy side dish idea for the more complex main dish (wonton soup. This is not a side I would have thought up on my own since it’s not in my typical cuisine that I cook. However, it was tasty and I am happy to have the “recipe”!

I couldn’t find ginger dressing at my local mega-mart so I went to McDonalds instead. It turned out well but I don’t think I would attempt it again.

I REALLY liked a previous reviewer’s suggestion to substitute a bagel for the carrots, and cream cheese for the ginger dressing. Brilliant dish!!

First of all: I don’t know what other reviewers are talking about when they say it took them 3+ hours to make this recipe! Don’t be fooled! This is extremely fast and took me only 30 minutes to complete! (watch out Rachel Ray!)
The experience of eating this salad is only comparable to a Mack truck filled with flavor violently smashing into your taste buds on an icy northern road! Great recipe!!1!!
