Ingredients
- 4 slices bacon, chopped
- 3 bunches mustard greens, trimmed and chopped
- 2 tablespoons white vinegar
- 2 teaspoons sugar
- Coarse salt
- 2 cups chicken broth
Instructions
- In a large skillet over medium high heat brown bacon and render its fat. Add chopped greens to the pan in batches and turn until they wilt, then add more greens. When all of the greens are in the pan, add vinegar and cook a minute. Season greens with sugar and salt. Add chicken broth to the pan and cover. Reduce heat to medium low and simmer greens 15 to 20 minutes then serve.

Loved it. We had cooked bacon so used avocado oil as the fat and added the bacon to it. Used apple cider vinegar instead of white. Simple and tasty dish…even my eight year old liked it!

Instead of smoked bacon, I use pancetta with a tablespoon of olive oil and thinly sliced garlic. By using pancetta, further salt is not needed.
Tried making mustard greens for the first time this evening, and this is a great recipe! I will definitely be making this one again!
VERY GOOD ! WITHOUT ANY SIGNICANT CHANGES…AS FOR TIMING FOR THE PREPARATION OF EACH INGREDIENT, OF COURSE, THE SHOWN TIME IS WAY OFF…IT TAKES MUCH-MUCH LONGER THAN 10 MINUTES. I GOT VERY LUCKY LAST TIME I WAS MAKING THIS DISH: AT A LOCAL GROCERY STORE, THEY WERE SELLING VERY CHEAPLY ALL FRESH, WASHED, DRIED AND CHOPPED COLLARD GREENS. I BOUGHT 1 LB OF THEM. FROM ANOTHER RECIPE I LEARNED TO COOK BACON IN 3 TABSP. OF OLIVE OIL AND 1-2 TABSP. BUTTER-IT REALLY GIVES THE DISH PERFECTION ! ALSO, I USED 1 teasp. of GOOD RICE VINEGAR INSTEAD OF WHITE. I COOKED ALL OF IT FOR 35 MIN. AND WE ALWAYS INJOY THIS DISH !
I’m making this now and I’m confused about “rendering the bacon”. Do I use the fat in the recipe, or pour it off and just use the bacon?
I cooked and ate mustard greens for the first time. This recipe was great. I used Oscar Mayer Jalepeno flavored bacon crumbles (4 tablespoons to equal 4 cooked strips) and it came out with a real nice flavor. 2 thumbs up!
This recipe is great it takes the strong flavor of mustards and makes them yummy!

Very good. But the prep time is definitely NOT 10 minutes. The cleaning, drying, and chopping of the greens at least took me 20, and then there is the cooking of the bacon, onion chopping etc.
Outcome though was excellent. My rating is based on that.
