Ingredients

  1. 2 tablespoons grapeseed oil
  2. 1 medium red onion, thinly sliced
  3. 1 red bell pepper, julienned
  4. 1 1/2 cups green beans, ends trimmed, cut into 2 to 3-inch pieces
  5. 2 cups cremini mushrooms, wiped clean, halved and sliced
  6. 3 baby bok choy, sliced into 1/2-inch pieces
  7. 3 cloves garlic, thinly sliced
  8. 1 tablespoon soy sauce
  9. 2 teaspoons fish sauce
  10. Freshly cracked black pepper

Instructions

  1. In a wok or large saute pan, add the grapeseed oil and when almost smoking, add the onions and bell peppers. Saute, stirring constantly, for 2 minutes. Add the green beans and mushrooms and cook for 2 minutes more.
  2. Add the bok choy, garlic, soy sauce, and fish sauce and saute until just wilted. Add pepper, to taste, and serve immediately.

Made this tonight for a Meatless Monday dinner with steamed rice because I had mushrooms, bok choy and a pepper in my fridge. As several others mentioned, the flavor was lacking. I expected the fish sauce to add more oomph. Maybe it needed more? We added more soy sauce and a drizzle of sesame oil and that helped.

This was good. I had all of the ingredients and had to use them up, so that was awfully convenient! Next time I make this, I will cook the green beans with the peppers and onions so that they are a bit more well done. Hubby doesn’t like “crunchy” veggies. I also added more soy sauce and a touch of sesame oil at the end.

Let me just say, ah’mazing! Love the flavors. I will definitely add this to my rotation. On a whim, at the end of the cook time, I added one of those individual cups of brown rice, red rice, and quinoa that I needed to use up. Served with grilled Asian chicken thighs. So good.

Good solid recipe.  Loved all the veggies, especially bok choy.  I don’t often have Bok Choy but when I do this is the recipe I’ll use.  I did find the flavor lacking,  something was missing, but can’t quite decide what.  I followed the recipe used soy, fish sauce, garlic and added fresh grated ginger, but still needed something else.  Maybe some red pepper flakes or perhaps as a previous reviewer mention some siracha.   But over all a good veggie dish.  Served with grilled soy-maple salmon and ginger rice.

This was so simple yet amazing! Yes, prep all the vegetables in advance but don’t you do that anyway? Subbed asaragus for green beans. added ginger. We couldn’t stop eating it waiting for the salmon to come off the grill!
