Baked Gigantes Beans

Ingredients

  1. 2 cans butter beans, drained
  2. 1 cup canned tomato sauce
  3. A handful chopped flat leaf parsley
  4. 1/2 teaspoon dried oregano
  5. Extra-virgin olive oil, for drizzling
  6. Salt and pepper

Instructions

  1. Preheat oven to 450 degrees F.
  2. In a small oven safe dish or casserole, combine beans with tomato sauce, parsley, and oregano, crushing the oregano in your palm before you sprinkle it into the beans. Drizzle beans with a touch of extra-virgin oil and season with salt and pepper, to taste. Combine ingredients with a final toss.
  3. Place in oven and bake 12 minutes or until sauce is bubbling and beans are heated through.

This is delicious. I’ve made it several times. I add sauteed onions and garlic. I also toss in a handful of chopped fresh basil if I have it on hand. I serve it with a salmon fillet topped with a dollop of homemade pesto.

I’m always looking for new vegetarian dishes, but specifically those that have minimal number of ingredients and don’t require alot of prep time. This was amazingly simple and was a totally satisfying dinner (and had leftovers for lunch!). YUM

I am Greek and have made these beans too many times to remember. To kick up the flavors, sautee a little onion, carrot and garlic then add beans, fresh tomatoes (or a little canned, but fresh is best) and LOTS of parsley and EVOO. Bake as suggested by Rachel. This is such a great dish hot or cold. My congrats to Rachel for digging out this time tested recipe from my country.
