Bacon and Brussels Sprout Hash

Ingredients

  1. Extra-virgin olive oil
  2. 4 slices thick-cut bacon
  3. 4 sprigs fresh thyme
  4. 2 pints Brussels sprouts, cut in 1/2
  5. 1 pound fingerling potatoes, split down the middle
  6. 1/2 pound red pearl onions, peeled
  7. Kosher salt and freshly ground black pepper
  8. 1/2 cup low-sodium chicken broth
  9. 2 tablespoons balsamic vinegar
  10. 1/4 bunch flat-leaf parsley, leaves roughly chopped

Instructions

  1. Set a large saute pan over medium heat and add a 2 count of olive oil. Cut bacon into long strips and add to pan together with thyme. Cook for 5 to 7 minutes to render the fat then strain and set aside. Add Brussels sprouts, potatoes and pearl onions. Season with salt and pepper and cook until slightly browned. Add chicken stock and steam for 3 to5 minutes until liquid has evaporated and vegetables are tender. Add balsamic vinegar and toss to coat. Cook until balsamic has reduced then fold in fresh parsley and bacon.

Very good. I did put the potatoes in the pan about 7 minutes before the rest to make sure they were done. I loved the kick from the balsamic vinegar. Served it with Tyler’s Chicken Cordon Bleu. That too was delicious. Perfect pairing.

Great Recipe! I prepared this after watching the feature episode and loved it. I substituted Yukon Gold potatoes as I did not have fingerling to hand and still worked great. Nice flavors. I did add 2 cloves of garlic finely chopped for that extra flavor, which also pairs nicely with the garlic breadcrumbs on the Chicken Cordon Bleu. Highly recommend.
