Ingredients

  1. 4 cups baby washed arugula
  2. 1/2 red onion, sliced
  3. 1/2 cup toasted pumpkin seeds
  4. Shaved Parmesan, for garnish
  5. Kosher salt
  6. Red wine vinegar
  7. High-quality extra-virgin olive oil

Instructions

  1. In a bowl, toss together the arugula, onions, pumpkin seeds and shaved Parmesan. Season with salt. Drizzle with vinegar and oil and toss. Taste and re-season. Serve immediately.
