Shrimp Puffs

Ingredients

  1. Cooking spray, for coating the muffin tin
  2. 1 7 1/2-ounce can refrigerator biscuits
  3. 1 cup shredded monterey jack cheese
  4. 1 scallion, white part and some green, chopped
  5. 1/2 cup mayonnaise
  6. 1/2 pound baby shrimp, cooked and peeled
  7. 1/2 teaspoon chopped fresh dill

Instructions

  1. Preheat the oven to 350 degrees F. Coat a miniature-muffin tin with cooking spray.
  2. Split each biscuit in half and place each half in a muffin cup, pressing it into the bottom and up the sides.
  3. In a medium-size bowl, mix the cheese, scallion, mayonnaise, shrimp and dill. Place 1 tablespoon of the shrimp mixture on top of each biscuit. Bake for 20 minutes, or until the puffs are golden and bubbling.

I have made this twice. I followed the recipe directions using the miniature muffin pan as stated in the recipe turned out great & very tasty both times. Great for an appetizer to serve to guests. This recipe rates Five Stars, I will make again.

I worked my tail off for a pre-thanksgiving family dinner (bc I can’t do the big day with everyone this year) and these easy-peasy appetizers were hands down the hit of the party and I cooked for two days straight on this dinner. I bought a small shrimp cocktail appetizer for the already cooked and peeled shrimp and just cut them up. One regular 14 oz can of biscuits cut in half made two dozen mini muffin tins for me. Be ready to hand out this recipe. Used cheddar cuz that’s what I had. Fantastic.

I use puff pastry instead of biscuits. Also added some Worcestershire sauce, hot sauce, and extra dill. May not be the same recipe, but who cares? It was good!

I usually agree with other recipe rate-ers but not this time. I found this to be rather foul. Unfortunately I doubled the recipe given the number of guests at our gathering. I threw out almost all of what I brought and everything I had left at home. The shrimp mix is not bad (I added jalapeño jack cheese instead) but the bottom part was IMO inedible. I used southern style can biscuit, famous brand and followed everything else to the tee. Yuk. I would maybe make this for incarcerated people as a treat given the shrimp and tasty cheese inside, but that’s it. It was a big waste of a lot of ingredients. So sorry to have to post this.

Very simple, very delicious appetizer or side. Always a hit at my Christmas party. If you have someone with seafood allergy you can substitute the shrimp for any other cooked meat and it’s still awesome!
