Shrimp Boil

Ingredients

  1. 2 lemons, halved, plus wedges for serving
  2. 1/2 cup Old Bay Seasoning
  3. 8 cloves garlic, smashed
  4. 1 large red onion, quartered
  5. 6 sprigs fresh thyme
  6. 1 pound baby red potatoes
  7. 4 ears corn, husked and snapped in half
  8. 1 1/4 pounds large shrimp, unpeeled
  9. 2 tablespoons unsalted butter
  10. Hot sauce, for serving (optional)

Instructions

  1. Fill a large pot with 4 quarts of water. Squeeze the lemon juice into the water and add the squeezed lemon halves. Add the Old Bay, garlic and onion. Tie the thyme sprigs together with kitchen twine and add to the pot. Cover and bring to a boil, then reduce to a simmer and cook about 5 minutes. 
  2. Add the potatoes to the pot and cook until just tender, about 10 minutes. Add the corn and cook 5 more minutes. 
  3. Meanwhile, slice along the back of each shrimp through the shells; remove the veins and rinse the shrimp. Add to the pot, cover and cook until the shrimp curl and are just opaque, 2 to 3 minutes. Transfer the shrimp and vegetables with a slotted spoon or skimmer to a large bowl. Add the butter and about 1 cup broth to the bowl and toss until the butter is melted. Transfer the shrimp and vegetables to a platter. Serve with the remaining broth, lemon wedges and hot sauce, if desired.

Gotta love one-pot meals and this one is as tasty as it is is simple. I go to this again and again and when I can snag snow crab clusters it is even better as a Shrimp & Crab Boil.

If you can’t find baby redskins just buy the regular redskin potatoes and throw them in right at the start when you put the onion, Old Bay, Lemons, Thyme and Garlic in and simmer 20 minutes after it comes to a boil before adding the corn then proceed per the recipe

I made this today and quadrupled the recipe to cook for 14 or 15 people. Good thing only 12 showed up because that’s what it fed and I also added about 3 pounds of smoked sausage. The flavor was very good even with less Old Bay because some couldn’t handle that much, I just put it on the side and told ppl to sprinkle it on theirs or mix in the broth.
