Roasted Spot Prawns

Ingredients

  1. 16 Spot prawns, butterflied, shell on
  2. 2 pounds Crabcake mix ( search crabcake mixture )
  3. 1 quart hot and sour vinaigrette (search Hot and Sour Vinaigrette)
  4. 3 English cucumbers, junlianned and seeds removed
  5. 1 red pepper, bruniose
  6. 1 yellow pepper, bruniose
  7. 1 green pepper, bruniose
  8. 1 tablespoon ginger, chopped
  9. 1 teaspoon shallot, chopped
  10. 1 teaspoon garlic, chopped
  11. 2 tablespoons mint, chopped
  12. 2 tablespoons cilantro, chopped
  13. 1 quart Hollandaise ( search Hollandaise sauce )

Instructions

  1. Preheat oven to 500 degrees. Stuff 1 tablespoon of crab mixture into each prawn. Place prawns on sheet pan with 2 ounces in water on pan. Cook for approximately 5 minutes.
  2. Meanwhile, bring vinaigrette to a boil. Add cucumbers until slightly wilted. Remove from pan and keep warm. Add peppers, ginger, shallot and garlic and reduce sauce slightly. Add mint and cilantro.
  3. Place cucumber julienne in center of plate. Add prawns in center. Top each prawn with 1 tablespoon of hollandaise. Finish by spooning vinaigrette around plate.

I pity the novice who sees this impressive recipe and the “easy” description. This recipe is easy, if you just happen to have a prep cook hanging around to brunoise and chop your vegetables, and make the hollandaise and crab cake mixture so it’s all there for you in advance.

Also, the recipe was scaled back from restaurant proportions, but you certainly don’t need a quart of hollandaise and 2 pounds of crab cake mixture to get 16 tablespoons of each. No wonder there are no reviews!

Michael Mina is a fabulous chef; I’ve been to several of his restaurants. I’m sure this dish is excellent. The rating is for the messed up proportions! He probably uses those amounts of hollandaise and crab mix in a night!
