Quick-Marinated Shrimp Kebabs

Ingredients

  1. 1/2 cup olive oil
  2. 3 cloves garlic, thinly sliced
  3. 1 tablespoon chopped fresh oregano
  4. 1 lemon, zested and juiced
  5. Kosher salt and freshly ground black pepper, to taste
  6. 16 large shrimp, peeled, and deveined
  7. 1 summer squash, seeded and cut into 1-inch pieces
  8. 1 red onion, cut into 1-inch pieces
  9. 1 zucchini, seeded and cut into 1-inch pieces

Instructions

  1. In a medium bowl, whisk together the oil, garlic, oregano, lemon juice, and zest and season with salt and pepper.
  2. Alternately thread the shrimp, squash, onion, and zucchini onto the skewers, using 4 shrimp per skewer.
  3. Put the kebabs in a shallow baking dish and pour the marinade over the top. Marinate the kebabs at room temperature, turning occasionally, for 10 minutes.
  4. Preheat an indoor grill pan or an outdoor grill. Grill the kebabs, turning and basting with the marinade occasionally, until lightly charred and just-cooked through, about 4 minutes.

I did not do everything in this recipe. I actually used the following as a base for a marinade for the prawns.
1/2 cup olive oil
3 cloves garlic,
1 tablespoon chopped fresh oregano,
2 tablespoons of fresh italian parsley,
5 sweet basil leaves.
1 lemon, zested and juiced
Unpasturized honey to sweeten (to your taste (i used about 2-3 tablespoons)
Kosher salt and freshly ground black pepper, to taste

My husband didn’t like the lemony flavour (he liked it tangy but a little sweet) so I sweeted with fresh honey and this actually smoothed out the flavours I did marinate the prawns for about 2 hours. Once the prawns were grilled, they were fantastic. .
